Uncooked hamburger meat and its flavor sucks. There is a way to get a good juicy burger without eating cool, bloody, uncooked meat. I can do it, and I'm far from a pro. I agree that most people err on the hockey puck side, which likewise sucks.

im assuming it has more to do with and upscale place might make a few burgers in one night and pay a lot more for the cooks doing it. While the fast food, fast casual burger places make a few hundred and are just trying to get people in and out. The people cooking them are making minimum wage. Much simpler to cook them all the same and you dont risk the chance of getting anyone sick. I know places like backyard burger and jack in the box had e coli outbreaks years ago. Im sure other places have as well.


Believe it or not, a lot of people are scared of the faintest hint of pink. You can cook a burger at 160 and still have some pink.

Especially when it comes to cooking pork. How much pork have you eaten that has been ruined by over-cooking? I understand trichinosis was a problem years ago, but it's very rare now.

Many of us like a medium rare burger. Having said that, Medium rare hamburger is like a strange romantic encounter - it may get you in all kinds of trouble.

E coli infections, especially in those with weakened or compromised immune systems (anyone at the end of a nasty flu infection, asthma sufferers, Children, Old folks, smokers, drug users and so on) can be very nasty and difficult or impossible to bring under control, since there are E coli strains out there now that are very resistant to antibiotics.

In other words, like the stranger you take home, you may get an E coli infection that kills you or does all sorts of bad things to you that are about as bad as death.

Having said that, I will tell you to eat your burger as close to medium as you can stand and I will probably order mine medium rare as I watch my wife roll her eyes. It's OK though. I am ten feet tall and bulletproof.

When in college many moons ago was intrigued by cannibal special on Camelia Grill menu. Raw hamburger steak held together by raw egg. Always looked but never saw it on anybody's plate. Doubt it's still on the menu.

that was they're version of steak tartare. I never tried it, but I've had other versions before and it was really good. But, you have to like the taste of raw, irony meat which some people don't

It's classic steak tartare and done right, served with great French fries and a nice Pinot Noir and it's one for the ages. Phenomenal.

However not exactly what I would be pursuing the menu for at Camelia Grill. But I will eat a medium rare hamburger.

Been so long ago don't remember what used to get at Camelia Grill ; just what didn't : cannibal special. .

I don't even like the taste of rare ground beef so it's not a problem for me.

And people saying that you're losing juiciness and flavor by
"overcooking" it are just flat wrong. There might be a little more loss of grease, but it's hardly noticeable. I don't like a soggy bun anyway.

Ground beef is exponentially more dangerous than a steak which a lot of people don't understand. Sure the risk is pretty low in general, but much more likely in ground beef.

I don't know why I don't like rare ground beef, I love a blood red steak

Nothing better than a rare steak. You should try rare ground beef made from rib eye and short rib meat. I made some of that the other day and ground it just once, best burgers ever.

I am not a fan of a hamburger with a cool center. Too much fat content. I would only eat a med-rare to medium burger that I ground.

I eat steaks med-rare to rare.

Well medium rare should be warm on a hamburger or a steak. Rare would be cool and I don't like cool.

I understand it's not actual blood if that's what you mean. Or only a very small amount is. But that red shite that pours out an under cooked burger, that soaks into your bread and turns it red and mushy, that ain't my cup of tea. Plus it can maim your innards.

I love a good med rare burger;however, when I cook burgers on my kamado @ 550-600 there are very close to well done and still extremely juicy. I do buy 80/20 though.
