My green wave pride (I have both purple, gold, olive, and sky in my veins) compels me to give you some uptown recs for a father/son visiting campus.
--Willie Maes Grocery n Deli, new uptown location of Willie Maes fried chicken empire. Even ppl from Arkansas like fried chicken.
--Camellia Grill. Dad will find nothing not to like on the menu, plus it's a NOLA institution beloved by generations of undergrads.
--TruBurger, again dad will not be freaked out by the menu. Not a chain, hand dipped corn dogs, shoestring fries.
--satsuma on Maple. Breakfast, sandwiches, enough hippie/healthy vibe so the kid doesn't think NOLA is solely populated by burger eaters. Kiddo can eyeball all the Maple St joints he will be free to visit once free of daddy.

and I hate to say it but his type would probably really like Margaritaville or that Toby Keith restaurant.

yea, it might be too formal. Mr. John's is safe though and he could wear jeans and a polo. Same for Mr. B's.

one of my very good friends from Cheneyville is like this.

I brought him to Houston a couple years ago. We went to Hearsay for a beer and a burger with a group of friends the night we got into town. He got mad he had to order a margarita then got a burger, which he said he really enjoyed, as we all did.

The next day were at the pool and a girl asks us how Hearsay was and he just yells "shitty!" We inquired why he changed his mind and he said "I couldn't read the damn cursive on the menu."

Cafe' Maspero is casual, cheap (cash only), and has American style non-seafood items on the menu.

I'm with you except for the one obvious racist stipulation he put in his request. I get how that can come from a certain sort of ignorant/sheltered perspective, though, as obviously Salmon does as well.
