Yep.

Anytime I make tacos I have onion, cilantro and lime mixed. I also put some sea salt in it. Man that is refreshing.

And I like to smoke tomatillo on my green egg and make smoked salsa verde.

Good. Stuff.

Menudo, caldo de res, carne guisada, puerco guisada, chile verde, chicharron tacos, lengua tacos, sweetbread gorditas, good Barbacoa, cabrito, birria, or even something as simple as a fresh tortilla off the comal with some fresh asadero cheese and a grilled pepper.

That's the just short list....
