Feeding a group of 10 beach trip

Need something I can cook to bring to the beach. Was thinking red beans but thinking that may be too heavy. Anything "lighter" I can bring?

Some sort of pasta with a light sauce and chicken? Should be lighter than red beans.

Not that spaghetti/red sauce/meatballs is lighter, but it easy to do.

Do you need something you can freeze ahead of time or you can prepare ahead of time that will be eaten pretty quickly?

ETA: Lunch meal or dinner? Or snack on during the day meal?

I would do an asian slaw or pasta salad. You want something cold while out in that heat. I agree red beans would be too heavy. The good thing is most water from here to Destin is brown, so at least your diners will be able to go in the water and not be caught

I was gonna make it the night before. Just going for 4 days, it doesn't need to be freeze able

Ha! No it's not nasty. Just kidding about the color. It's brown from here (NO) till around the MS/AL line. It starts to gradually turn green as you work your way to Florida. Something about the sediment of the Gulf clouding the water.

I'll be in orange beach myself this Saturday to Tues. I believe there it's a brown-green, but it's been a while since I have been.

Okay, I just edited my post to ask if this was for lunch, dinner or munching?

Have you thought about making a good remoulade sauce, then getting some good boiled shrimp there and making a big salad. Bring along some hard boiled eggs, get some good lettuce and toss. Could had a mix of crabmeat and shrimp. Warm some bread on the side.

I tend to go with fresh seafood of some sort since it's so readily available.

Could make a good chicken salad, also.

Cook a big roast with gravy, bring some Leidenheimer's and put together some roast beef poboys with the dressings.

What are the other people bringing aside from the spaghetti and is this couples, just the guys or you and the girls?

Make fajitas, but cook them on the rarer side. Finish cooking them just before it's time to eat. You'll have all the tedious prep stuff done, but a fresh meal.

yeah this is a good way to go. cook up a couple of chickens and mix it up. again, I prefer simple that can be kept and served cold while on the beach. you'll have an ice chest, but will you have a microwave.
