Low country boil. Won't prepare ahead of time, but its almost as easy as reheating a dish.

Have the lobster guy send your a dozen lobsters to the condo, then steam or grill with some sides. Should be quick, easy and light...

I disagree on the sage. It's sort of like cilantro. People love it or hate it, for the most part. I'm not crazy about it and I wouldn't want it in chicken salad.


Lester, hard boil some eggs to take and get some nice ripe tomatoes and avocados, all of which you can slice up before serving to add a few things of interest to the salad plates for folks rather than straight chicken salad on lettuce. You could also bring some fruit and have some poppyseed dressing on the side for those who might enjoy that. There are some good bottled poppyseed dressings out there. I know of one that I really like, but I can't think of the brand right now.

Slice up some French bread, brush with melted butter and dry them out in a 250 oven. Let them cool completely and load the slices in a ziplock bag. The toasties last a week in the bags and they go well with salad meals.

You could also bring some good bread if you want to offer the option of some folks making a chicken salad sandwich.

If you decide on a shrimp salad, shrimp tossed in Cousin's Creole Tomato Dressing over some good lettuce is delicious. Same sliced additions that I suggested with the chicken salad makes for a damn good summer heat meal.

yea that does sound good too. Not sure i want to peel skrimp though. Thanks for the advice

Call that seafood joint in Orange Beach and have them boil, peel and devein for you. Just pick them up. I've done that a bunch at Blalock's.
