Favorite vegetarian dish?

I usually hate vegetarian but a place by my apartment does vegetarian comfort food and it's amazing. I always get the Seitan Thai Chili Ribs w/ Siracha Ranch and Quinoa Chili w/ cheddar and avocado

Mashed potatoes
Rice
Indian jeera rice with cumin seeds
Macaroni & cheese
Pizza with no meat

Three that I get at the Indian restaurant but don't know what they are called:
1) Spinach in heavy cream
2) Something that has potato chunks and peas and is very spicy
3) A dish that has okra and tomatoes among other veggies.

If I was to change to vegetarian I would start out by eating Indian food, subway, Mexican - especially taco bell since it's cheaper, Subway, and pizza.

Yes, but I think it is Tofu and not cheese. I thought it was cheese for a long time and ate it like crazy. At one time a few of us at work were doing a low carb diet and got the guy at the restaurant to explain the ingredients in our favorite dishes and he explained that is was tofu and not cheese. I only eat it on accident now.

From wiki:
"a food made by coagulating soy milk and then pressing the resulting curds into soft white blocks."

"Tofu originated in Han dynasty China some 2,000 years ago."

"Tofu has a low calorie count and relatively large amounts of protein. It is high in iron and depending on the coagulants used in manufacturing (e.g. calcium chloride, calcium sulfate, magnesium sulfate), it is often high in calcium and/or magnesium." It is also a low carb food.

Stir Fry. Just pick your favorite stuff: broccoli, carrots, green beans, mushrooms, onions, garlic. Get that wok hot and go. Add Asian hot sauce at the end and serve over steamed rice.

Holy crap, I had something last night that I have never had before. It shoots right to the top of the vegetarian list for me. I went to a restaurant and had the pot roast & mashed potatoes w/gravy.

For the appetizer I got fried mushrooms. Those things were fricking great. Next time I am just going to get fried mushrooms w/mashed potatoes & gravy.

I have liked mushrooms but have mostly just eaten them on pizza. I need to find a good recipe for fried mushrooms now.

The little cubes in sag paneer (the creamy Indian spinach dish) are actually cheese.

Paneer cheese (hence the name).

I've never been a fan of arugula, but I had a salad in New York that I liked alot. It's arugula, cherry or grape tomatoes, good quality pitted olives and burrata cheese.
Burrata is a very soft mozzarella and when it's tossed in the salad, it makes a creamy coating to the salad greens. I also add olive oil and champagne vinegar. Delicious.
