My wife is vegetarian as well, so I cook and eat vegetarian pretty often. She's also cut out most dairy from her diet.
Currently we eat a lot of kale, quinoa, brussel sprouts, sweet potatoes, lentils, and garbanzo beans.
One of my favorite current dishes to make is shredded brussel sprouts stir fried with peanuts and sriracha.

We're both pretty lactose intolerant. No ethical objections or anything like that, and we'll still splurge and have some ice cream, yogurt, and cheese (even though we pay for it digestively later)... we just don't eat dairy daily.
She does eat poached eggs (frequently) and fish (occasionally) though... so I'm not sure that would really be a vegetarian.
