January Chopped Challenge Ingredient Nomination thread (Ends at 3 today)

You know the rules.
Nominate an ingredient. We are going to shorten and simplify this time.
Everyone can nominate ONE ingredient in this thread. ONE. So choose wisely. (Except B&T Coonhound, our champion, he cannot nominate but has another advantage).
We will keep this open until Wednesday at 3.
At that time, our champion, B&T Coonhound will pick the 4 ingredients, dictator style. (We will then start a new thread with the main ingredients, discussion, etc. and give two weeks for entries).
Go.
Nominated Ingredients:
Peanut Butter (crunchy or smooth)
Poblano Peppers
Blue Agave Nectar
Popcorn Salt
Chicken
Bologna
Orange Sherbert
Corn Meal
King Cake (or as close as you can get in your area)
Tilapia
Boudin
Tahini
Oreos
meat jerky
SPam
Mirliton
Tequila
Pickled Okra
Brisket
egg whites
Oxtail
rutabaga
hibiscus
granny smith apples
strawberry milk powder
duck
oysters
chicken livers
pillsbury biscuit dough
hot cheetos
avocado
goat cheese
kalamata olives
skirt steak
chipotle chilis
yuca
gerber carrot baby food

That is your advantage as the champion. However, when the time comes, I don't have a problem with you delegating that authority to someone.

That could be another cool perk for the champion: he can pick the 4 ingredients and if its an Appetizer, Entree or Dessert challenge.
If others want that to be the case we can make it happen. Otherwise, we can keep it to where people make whatever portion size they want.
(One of these days I want to do some different stuff, a single bite challenge, dessert, etc)
