Got a Vacuum Sealer for Christmas.... Couple Questions

Got this model.
1) Is it a quality model or should I swap it and get another?
2) Are the brand/type bag important or are all vacuum sealer bags the same?

Nothing wrong with that set up at all.
I buy my bags in bulk from eBay. You can save many times over by buying the rolls and making your own bags. All this means is that you use the sleeve and seal one end with your vacuum sealer, determine the length of bag you need for that particular application, cut it to length, place meat inside, then vacuum seal the open end.
Enjoy your new vacuum sealer. You will be buying meat in bulk and enjoying this jewel for quite some time.

I've tried a few, and FoodSaver works the best. This model looks fancy arse - mine does not stand up like that.
Don't use generic cheap bags. The FoodSaver brands are good quality and can get them for a good deal at Amazon.
I'll take it off your hands for $50 as well...

I have a food saver that's a good 8-10yrs old... Still going strong. I find that the food saver brand bags work the best as well... Seem to be thicker than some of the other brands. I will usually pick up a variety box at Sams. Usually about $35 I think and has 6 rolls I think.
Your freezer will grow with this thing. Also, really good for quick marinades.

Boss, you got the fancy pants FoodSaver. My old one works great, but I've thought about getting the one like yours. It looks easier to clean if I recall correctly. Use the FoodSaver bags. I don't recommend subbing those. I buy rolls and sometimes the pre-made bags. I keep a variety on hand. You're going to enjoy it with all the cooking and hunting you do. Great gift in my opinion.

that one looks damn fine. I have a Foodsaver brand but not that high end. mine works wonderfully so I'm sure that's a keeper. also, I buy the Foodsaver brand bags off Amazon as others have suggested. I don't trust the cheap knockoff brands.

Purchasing food saver rolls at Kohl's turned out to be a good option. They were on sale AND I got a $15 Kohl's cash coupon to be brought back as soon as the following day and up to a week. I went back and got some more rolls. All told, it was cheaper than ebay.
I've got both the 8" and 11" rolls in my arsenal, and besides the samples that came with my unit, I haven't purchased any bags...no need to with the rolls since you can custom size them.
Not only is my food saver vital to my sous vide cooking, but I usually don't use an entire package of bacon or all five sausages that come to a unit for example, so I've already saved quite a bit of $ just by being able to seal the remaining portions rather than the stuff going bad in the fridge.
If it's your first vacuum sealer, just remember to fold the lips of the bag outward before you fill it, then straighten it back out so it makes a good seal and also avoids contamination.

Great thing to have. Even though it is just the 2 of us I still buy in bulk, usually from Sam's, ground beef, pork loins, mozzarella cheese and fill the freezer.
Some hints, for liquids like soup/gumbo I freeze in a container then move it to a bag later. This makes for easy thaw out by placing in boiling water. You can also reseal things like potato chip or crackers bags.

When doing this, what advantage is there to vac sealing vs just putting it in a ziplock?

I buy the quart size bags in bulk (amazon, eBay)
Less trouble than having to cut and seal the rolls and they're diet cheap compared to the food saver brand bags
