either caliber

I have a M70, and it is a heavy rifle. Not ideal for walking around

This or the 270. Easy to find rounds for.

A lot depends on were you hunt at the most. Very thick, 30.06 with a 180 gr bullet. More open woods or fields, 30.06 140-150gr bullets or .270 130=140gr bullets.

308's are nice till one day you try to shoot out to 300+ yards.

If I go with the Winchester model 70 it would definitely be the featherweight w/ the wood stock

Didn't realize you could push as light as a 140gr bullet out of a .30-06

The .308 delivers essentially the same terminal ballistics as the .30-06 ----- but with less recoil.

I wouldn't limit myself to looking only at the bolt actions. Several of the "good" AR10's are 1/2 MOA guns, and they hold 20 rounds in the mag.

Coincidentally (?), most .308 ammo is packaged with 20 rounds/box -- gotta love it when a plan comes together.

And you can buy most AR10's with a compensator that makes the recoil roughly = to a .223 (for quick follow-up shots). Then, if you get a sow and a batch of piglets out in a food plot, 20 rounds = fun.

The .270 -- well, why?

Just my interwebz $.02 worth.

I would go Rem in either 06 or 27. The other acceptable option is the same calibers but with the Tikka.

You can't go wrong with any if those guns or calibers. I have two of the three guns in .270 & .308. I don't have a 30/06 because I have a .308 and a .300 win mag. Right now with the ammo situation I would go .270 or 30/06.

What calibers do you currently have?

30-06 hands down. Best all purpose Deer rifle you can buy. FWIW just got back from West Texas Exotic hunt where I went head to head with 7mm mags, 308's, and 270's. My 30-06 had more knock down power than any of them. Distances from 75 yards to 300 on Elk, Axis and Fallow deer. Shooting 150 grain power points.

Winchester Model 70 (pre '64 if you can find it) Any of those calibers will take care of just about anything in North America. My 2 cents.
