Good Restaurant for Entertaining Clients in Vegas

I'm meeting a couple of clients at a conference in Vegas. Fairly buttoned-up group, so I want to find something that is nice but not "over the top" (Spearmint Rhino is out of the question). Any suggestions?

There is an excellent French restaurant inside the Venetian Hotel next to the Pallazzo Hotel. Sorry but I can't remember the name of it but it was special.

The chef came out and asked me why I was putting something (Tony Chachere's Creole Seasoning) on his food. Our waiter must have told him.

He tasted it and it ended up me giving him the Tony's because it was our last night there. He said he was going to use it on some of his specialty dishes.

Prime or Olives at the Bellagio.

Tao would not be good for a "fairly buttoned up group", but it is excellent. I would recommend Rao's in caesar's palace if you can get a table, Del Friscos and the Strip House are also good choices.

Mario Batali's restaurant Carnevino in the venitian is really good and would fit the work/client vibe well.

Buy the $39 24-hour buffet. Recommend Ceasers. Can't beat it.

i've always found mastro's to be the best steakhouse, but it might be a little over the top pricey.

For a great steak and if you are downtown--Vic and Anthony's. A premium steak house that has great, well aged steaks. It is in the Golden Nugget which has really gone through some great renovations since the people that own Landry's Seafood restraunts bought it.

My uncle is a CEO of a major corporation and he carries small packets of barbecue sauce and 1000 islands dressing with him everywhere. Says it endears him to other business folks and gives him the taste he wants

Cut in the Palazzo. Nice, but not too fancy and damn good food. I've gone here with vendors twice and everyone loved it.

The Mix at Mandalay Bay is a great view and good food if you think they'll be in to that.

If they're regulars Joe's that are just "buttoned-up" for the conference, you can take them to Public House between the Venetian and Palazzo. It's still nice, the food's good, and the beer selection is even better.
