Sides for Ribeye

The bride is going out tonight and I am grilling a ribeye. My standard sides are almost exclusivley marinated portabellas and baked eggplant. However, I want something different tonight. I don't want anything fancy, just something different and tasty. Any suggestions? TIA.

Roasted or steamed asparagus
Roasted or sauteed brussel sprouts-there are several recipes in the recipe thread/book
Sweet potato gratin
Pan or oven roasted cherry tomatoes in olive oil, garlic and herbs
Roasted butternut squash


Any veggies the bride likes in particular?

I buy those fingerling potatoes or small gold potatoes and half or quarter them depending on the size, toss them in olive oil and dry ranch or Italian packet and cook them at 400 til outside is crisp and inside in soft. May have to take out and shake them around through the curse of the cooking period.

I did something similar last week.

I had a ribeye and I was wondering what to make with it.

I put it on the plate by itself, opened a beer and that was supper.

A little ice cream for dessert and I was a happy guy.

Roasted rutabagas and baby carrots. Skin and 1/2" cube the bagas, toss them and carrots in some evoo, minced garlic, some rosemary, S&P. Roasted @ 400 for about 40 minutes or until tender.

I agree with the asparagus recommendations, but since you're grilling already, toss em in some olive oil, salt, pepper and then on the grill, or what I like to do is wrap a small clump in bacon ala candy cane style, securing with broken toothpicks on either end. Just remember to lay the asparagus against the grates so they don't fall through.

You know, I have never been in there. BTW, I will be watching my 5 year old daughter and son who is almost 2. So, I don't hink it will happen tonight either.
