Smoked Brisket Horror Story

My friend invited me over to one of his friend's house for a pool party. I sort of know the guy and he doesn't seem like a person who cooks much. Well he decided that he was going to smoke a brisket. He had been cooking it for quite a while already when I had arrived, so I asked him about when he thought it would be ready. He said he wasn't sure, but a few hours? I asked him where his meat thermometer was because I saw he was only paying attention to the temp of the smoker. He looked at me blankly and said that he doesn't need to use one. Several hours later, my friend asked him if it was ready to take off the grill and he said "The longer the better, right?" :facepalm:

He took it off about an hour later and proceeds to trim it immediately without letting it cool down. But get this, the first thing he did was awful. I watched in horror as he trimmed off almost all of the charred fat and throw it into the garbage. If I had known him better I would have told him that he doesn't know wtf he is doing.

Sounds like it was awesome and you should of told him that. Negativity and criticism is not allowed around food. Just pat him on te back and tell him he did awesome.

At least he tried to do it himself. You could have been subjected to a thaw-and-heat presliced brisket from Sam's. I give the guy credit for at least trying, even if he was a bit misguided.

As for slicing off the burnt fat, I do this myself, especially if the fat cap wasn't closely trimmed in the first place. Burnt, spice-crusted ends are tasty, but I say no thanks to the 1" thick, semi-charred, gelatinous blob of mucousy textured fat floating atop some briskets.

Could have been much worse. But it's tough for me to watch good food being messed up as well. At least it was edible.

It was dry and not very good. Needed sauce or sure, which I am not a big fan of. I like to taste the flavor of the meat combined with a thin layer of crusted fat.

Anyway, I am over dramatizing this. Had a food time but I just don't understand why people try to over complicate things when it comes to BBQ.

Drink a beer, get in the pool and enjoy. Stop off on the way home to eat. Appreciate the fact you were invited and don't be critical of your host. It's a quick way to not get invited to the next pool party.

Why are people reading between the lines? I never criticized the host...It would have been a douche move on my part to say anything...of course. I actually complimented him on it and thanked him for his hospitality.

It's like going to a crawfish boil where the guy knows nothing about cooking crawfish and lets them boil (not soak) for an hour straight because "the longer the better, right?" I don't know why but it just bothers me to see such a large amount of food tainted. Oh well.

Shoulda tried to help the guy out then, presented him your degree in smokology and gave him a few pointers.
