Started with a recipe I saw on Pinterest, which called for chicken breasts. I substituted with thighs and think we will end up with a big ole mess before it's all said and done.

Here's the before pic, not sure I'll show an after:

Leftover smoked ribs and pork loin.

I should've followed the recipe, brah.

These are going on the grill and the stuffing will probably all ooze out. The recipe didn't call for bacon, but I wrapped them up thinking maybe it will help hold things in.

The stuffing is spinach, artichoke hearts, garlic, grated smoked cheddar, mascarpone, grated parmesan, red pepper flakes, salt.

I've never used mascarpone before. I just wanted to say it like Giada does. LINK

Spaghetti and meatballs. I eat my red sauce over veggies now. Usually eggplant or zucchini but tonight all I had was yellow squash.

That sounds good, madam. Maybe I'll try that next time my husband has spaghetti. I've tried it over spaghetti squash, but thought it was a little sweet.

I did.....I assumed they liked them as they picked the bones clean. Will find out Wednesday if I'm a finalist.

I nibbled on leftovers that consisted of Red beans sans the rice, a couple of doe bites, and two pieces of speckled trout. The pot of chili franks were hollering at me, but I decided to save them for breakfast.

Report back on how that stuffing tastes, Darla.

Grilled beef filets, gorgonzola butter, sauteed asparagus, roasted red potatoes, spinach salad and blackberry cobbler, maybe with low carb ice cream or fully leaded.
