16 folks at my house.... Had 1 finish Kindergarden & 1 graduate from LSU today.

I buy all my red meat from Calandros.


Spinach Madeline (from memory - measurements approx)

Boiled 4 bags spinach, drained and retained liquid.

Made a light roux (1/4 cup flour) with butter (stick).... Added diced onions (1/2 white) and sauteed till limp. Added cup condensed milk, 1/2 cup of spinach broth, tbsp garlic salt, 1.5 tsp black pepper, tbsp celery salt, pinch of cayenne, fresh shredded mexican cheddar jack (10-12 oz)..... Stirred until melted and blended.....

Folded in spinach & transferred to baking dish..... Sauteed italian bread crumbs n butter (buttered bread crumbs).... Baked 350 for 30.

sounds tasty. had never tried that before till easter and it was arguably the best thing on the menu that day.

Good thing it's not the OT, or they'd ask you if your kindergartner knows how to spell kindergarten.
Looks great, nice occasion to celebrate and you have a long time to save up for another four years of college!
