Here's my WSM. Love it, easy to control temp, good for overnight cooks and recently purchased the DigiQ which controls temp consistently for the cooks past 12 hours.Attaching some pics!

which do you use more? Your WSM or that big box on the left in your first pic?

re: Akorn or WSM?

I use the WSM 85% of the time as the antique is a fuel hog! Don't get me wrong, I love the Oklahoma Joe Vertical Smoker, and tend to use it for larger birds, and for cooking capacity that exceeds what the WSM holds. I owned a 22" Weber Kettle first, then the OK Joe, and then the WSM 18 1/2". Still have all 3 and use the 2 Weber's the most.

Do you have to roll your ribs or is that preference? Seems like having to roll my spare ribs would get annoying.

So, I've never smoked anything before, but I'm getting one for my birthday this summer. Looks like the WSM is the way to go, but I',m concerned about being able to control temp and all considering I've never smoked before.

I was leaning towards a propane or electric, but is it just as easy to use or the electric/propane?

It's a space issue on the 18 1/2" WSM. You cannot fit three racks ribs on a grate without rolling them and since I was doing six racks, well you get the point...
I have smoked 8 boston butts on it at one time

It's all in what you want to do. Electric/propane can yield good results with similar flavor profiles, with the comfort of no fuss cooking. I personally prefer to light a fire, arrange the wood chunks and charcoal for slow burning, set the vents, and loosely monitor the cooking.

The thermometer on the smoker is worthless. It does not get close enough to the cooking surface, and is probably inaccurate. I found a lot I info from amazingribs.com. As a guy that just got into smoking I highly recommend you check it out.

Ok, so there is a guy in laplace selling a 2005 WSM for $150. It does not have a thermometer in it. Can I just drill a hole in it and install an aftermarket one or will that make the porcelain crack?

Just replace one of the grill screw/nuts on the side (that holds up the grill grate) with a thermometer. That way you get a true temp at the cooking surface and you don't have to drill anything. Your grate will rest on the thermometer at that location.

Also, I have both a WSM and a BGE (Akorn like). The BGE is a fine tool and a great grill or oven but it is NOT a smoker. The WSM is NOT a grill but an awesome smoker. The WSM has way more capacity for meat (2 levels) and a water pan for moisture/heat regulation. It also has a much longer fuel capacity which you can access without taking everything off. I've smoked for about 16 hours on one load and I can throw wood chunks in easily. You cannot do this on a ceramic grill.

If you want a smoker, get the WSM. If you want a grill, get the Akorn.

Look up Virtual Weber Bullet. Great tips and recipes to get you started with your WSM.

I'm a fan of mine with the smokenator. What don't you like about it? I'm just curious fwiw. I've thought about buying a dedicated smoker for several reasons, but my Weber/Smokenator being sub-par isn't one of them

Well, you can on a Primo, but that's not one of his options. (shameless Primo plug)

To the OP, get the WSM if your primary goal is smoking.

Primo Oval XL will be in my future. I really wanted to jump on that bulk purchase deal several months back but didn't have the cash.

re: Akorn or WSM?

For the FLA-LSU 2007 battle royale I smoked 4 full sized boston butts and 4 full sized briskets with the smoker continually operating for 36+ hours (started Wed night). It was great. Also yeah mine doesn't have a thermometer. I have one that is a wireless probe that goes into the meat and then a digital one that I just causally measure through the side every now and then. Once you get it to a target temp its a master at holding it.
