Posted on 4/16/13 at 6:34 pm to Jones
LINK
2 lbs brussel sprouts, halved
4 tbsp. olive oil
Juice & zest of 2 lemons
Kosher salt
6 basil leaves, torn
1/2 chili pepper, chopped (we use jalapeno)
Cilantro or Mint
1 cup sugar
1 cup white vinegar
1/2 tsp black pepper
1.5 tsp crushed dried red pepper
1/2 head garlic
Preheat oven to 400 degrees (or if you want to roast them longer and not run risk of burning them, 350-375 degrees)
Toss sprouts on baking sheet with olive oil and 1 tsp. salt.
Roast for 35-40 minutes. If lower temperature, maybe longer. Outer leaves should be crispy.
While hot place sprouts in bowl and stir in 1/4-1/2 cup sweet chili vinegar (see recipe below). Stir in lemon juice and zest, add salt to taste and garnish with basil leaves, cilantro (or mint) and chili pepper.
Sweet Chili Vinegar:
Mix 1 cup sugar, 1 cup white vinegar, 1/2 tsp. black pepper, 1 1/2 tsp. crushed dried red pepper, 1/2 head garlic - cook over low heat until sugar dissolves, about 5 min.

One of my favorite comfort foods, squash casserole.
Stew squash and onion, about 1/2 gallon of sliced squash and 1 sweet onion until it is very tender. Drain off the liquid. Season with liberal ammounts of black pepper.
Crush 1 sleeve of Ritz crackers finely.
Put the squash and onion in a casserole dish and stir in the Ritz and a splash (maybe 1/4 cup) of buttermilk until well mixed.
Top with grated extra sharp cheddar cheese. Bake in the oven until hot through and the cheese is melted.
I love this with grilled chicken quarters.

I like corn on the cob or some other type corn dish like maque choux or a souffle. It's one of my sides of choice with bbq. I also like baked bananas with bbq.

I did, Mr. Balls. I bake them with lots of butter, brown sugar, lemon and orange juice, orange zest, a little cinnamon and nutmeg and a little grand marnier. The sugars gets all good and caramelized and butter and goes well spicy bbq.
So there, Dorito Loco man!

Roasted rosemary potatoes. Fingerling are my favs. Create an infused oil of rosemary, garlic, and seranno. Toss potatoes, salt and pepper, roast until tender.

I have never baked a banana. But what you describe there sounds pretty awesome. I may have to bake me a banana before too long.

Shoot, youd be hard pressed to find a side that doesnt work with it. I like the steamer bags at Publix personally.
