Kellys Meat Market on Plank Road between Airline and Hooper.
Probably ask the butcher at Hi Nabor.

i used to love backbone stew. now, i prefer just using boston butt in it.

Boston Butt works well the difference is you don't get the marrow from the bones like a backbone which really adds a richness.

Poche's, next to Boutin's sells the processed pork backbone, but does not serve the dish

Pork backbone stew is a dish I've never made. Any links to good recipes already posted, or anybody want to share one?
