At 6yo - first rabbit on the run.
At 32yo five months ago - My 4yo casting, setting hook(or reeling when he noticed stopper gone), and boating his first legit fish(big ole bream). He thought he was caught on grass. When I went to help him it took off sideways.

Three come to mind for me.
Fishing with my dad when I was a kid and we caught around 50 slab crappie. Cold and windy and I had to beg him to go, but we slayed them
My first fox squirell taken with a single shot .410
My best Kayak trip to date. Limited out on specks in the first half hour, but I caught a fish every other cast for about 6 hours. They were still biting when I left. It was a perfect spring morning. About 75 degrees on a grass flat in Panama City. No wind, water was slick as glass but the tide was moving fast. Still haven't replicated a day like that.

My first (and still only) tarpon. Came in second at the GI Tarpon Rodeo. Caught it in the first few hours the Thursday of the rodeo. Was really exciting. Have been on the boat when we've caught a few others, but never reeled one in myself since then.
I can see that easily getting overshadowed by anything and everything I'll get to do with my son (only 9 months right now).

Floating down a river catching white bass with my nine year old daughter. I took her pole and flipped her crank bait under a branch then handed it back to her. She caught a six pound largemouth.

Hunting and fishing with my grandkids. So many to choose from. Catching a limit of bass with my granddad at Toledo Bend and Lake Guerrero (sp). My first bass over 10 at Toledo around 3am one May morning with a buddy after catching only two before that. Killed my first deer with open sights with one shot, stone dead. First limit of doves, squirrels was cool as a teenager. Killing three to four ducks in three shots, none of which were on the water. Watching you self trained lab make some awesome retrieves in front of your hunting buddies.

My son killing a doe and then a six point buck who was trailing her about ten minutes later. Got them this past Nov. We were in a buddy stand and I never even picked up my rifle. He picked the stand and I was just along for the ride the whole time. That topped him killing his first deer (doe) the previous season when he was 10. There is nothing like being in the stand with them and watching it all unfold.

As a parent there are multiple times when you sit back and watch your kids truely enjoy something outdoors, like pulling in bream after bream for the first time, and hearing their laughs of joy.
As an individual, winning my fist "big" redfish tourney after 2 years of trying really hard and coming close, then it all fell together one fine day...

When I was around 13 I caught a 6'6" rat snake. This thing was massive - far larger than any snake I had ever caught in my life. Had plenty great fishing moments over the years, but I can't recall being as elated as I was catching that monster snake as a kid. A week later I caught one that was 6'4" and thicker than the other - I literally dove on that sumbitch, and he got me good too.

Forgot, last year in a good ole boy fishing trny., my granddaughter and myself won 3rd out of 40 boats, none of which had a female on their team. She was 15.

Watching my dad catch his first big sac au lait from my boat.
He doesn't fish much anymore, but we grew up being taught by him how to catch a bucket of perch after work when we needed supper on the table. To see him light up like he did when he pulled that sac in the boat hit me in the feels.

My son took this big boy this year with a heart shot @ 110 yds. He turned 7 eight days before killing it, hell of a birthday present!!! To watch him get the shakes and be so excited after the shot was priceless and a memory I'll treasure for years.
