Frying Seafood for 20 people

I am frying seafood for a work event for 20 grown men. How many pounds of fish and shrimp do you think I need. Shrimp will be bought head on. I was thinking 20lbs Shrimp, 10lbs Catfish.

What's your opinion?

40 lbs of shrimp and 40 lbs of fish

I can eat my body weight in fried fish though.

2 lbs of shrimp (after de-heading)and 2 lbs of fish per person

1/3 of shrimp weight is in the heads so 20 lbs headless = 30 lbs with head on

figure this should cover it plus corn fritters or whatever else you got planned.

I would fry up a big jar of jalepino peppers as well as a few jars of sliced pickles, that's a nice extra touch that will go over very well. also fried egg plant is good depending on who likes it

So you think that each person needs 4lbs of seafood. Seems extreme to me. Catfish will already be in filets.

I always figure a 1/2 lb of shrimp per person when I boil. That's tails and average people. You say you're feeding grown men but fried is also going to be more filling. I think you're dead on at 20 and 10. Especially if the catfish is fillets and you're frying potatoes and hush puppies. That's a lot of grub.

Thanks for the advice guys! I will be cooking this Sunday night before a fishing trip at a camp in Port Sulphur. I wanted to make sure I had enough, but I am also on a budget since it is a work event. I'd rather put more money towards beer!

You don't have to fry ALL of the fish, but I wouldn't show up with any less than 15 pounds of catfish filet, 20 would make me more comfortable, or 35-40 pounds of head on shrimp. That's just what I would do.

Whaaa? That's a shite ton of food/pp.

When I boil shrimp for a group, I figure 1lb/pp (head on wt) + corn/potatoes and there's always leftovers. Even adjusting for a specific crowd, that's a lot of food, especially fried.

When in doubt, buy extra beer. They will quickly forget if there wasn't enough food, but they will remember if there wasn't enough beer.

I normally go with 2lbs per for a boil, would cut it back to 1 for each for fry though with equal amount of fish.

Holy shite. You guys can't be serious with these numbers. What are you basing this on? Seriously. Half a pound of filet per person with decent sides is a reasonable allowance. Add a couple more pounds if you want to give yourself some wiggle room. 20 lbs of filet is a shite ton of meat.
