So you think that each person needs 4lbs of seafood. Seems extreme to me. Catfish will already be in filets

all depends on how you are doing it, if you are cooking a "meal" where each person makes them a sandwich or poboy and that's it, they are done eating, then yes, in that case all you need per person is 1 lbs of shrimp "or" fish is all you need.

but .....

if its a company outing where people will be hanging out, drinking beer, milling about, constantly nibbling off and on here and there, then I would assume more people will be eating shrimp and fish by itself with no bread, and in that case over an extended time frame then yes 2 lbs of each should be "just enough" to allow everyone to eat as much as they like plus the big eaters who come back and eat more.

plus its better to plan to have a "little" left over enough for half a dozen people to take home a "go plate" rather then run out early.

if he has 2 lbs of each and cooks 1 lbs of each and then see how it looks, cook more if needed or not. either way having an extra 10 lbs of fish and shrimp to put in you freezer if you don't need it, is a safer bet then running out of food and leaving people hungry.

if money is tight then that's what making corn fritters, potato logs, and fried jalepinos and fried pickles and even fry up some motzerella sticks creates a HUGE amount of side foods and none of those costs much to as much as triple the volume of food there

What are you basing this on?

Well ya know, when I first read the OP I was thinking 20 grown men at a work day at camp. If that's the case I'll stand by my numbers. If it's 20 grown girly boys in cargo shorts and flip flops then obviously the numbers would be much less. Either way the very last thing you want to do is run out of food. Good luck to the OP.

Edit: If you don't have some left over, you didn't have enough.

I'd figure 1 lb per person total or so. I'd go with 12 pounds of fish filet and 10 lbs of peeled shrimp. To get 10lbs of peeled meat you will need 20 lbs of shrimp.

We had a work fish fry last month. They bought 30 lbs of catfish filets we had 20 people about a
15 men and 5 women. With all the sides, we maybe ate 15 lbs. There were tons of leftovers

A lb of fish filets per person is pretty generous if you have plenty of sides

2 lbs of shrimp of shrimp and 2 lbs of fish? Wth?

shorts and flip flops

What is wrong with this, especially at a camp, in the summer?

Personally, I'd go heavier on the fish than the shrimp. Should be cheaper and less prep. I'd rather go to a fish fry than a shrimp fry...

I guarandamntee you nobody on this site including yourself would eat 2lb of fish, 2lb of fried shrimp, sides, and beer in a casual setting. That's like eating contest territory lol.

2 lbs of shrimp (after de-heading)and 2 lbs of fish per person

1/3 of shrimp weight is in the heads so 20 lbs headless = 30 lbs with head on

figure this should cover it plus corn fritters or whatever else you got planned.

I would fry up a big jar of jalepino peppers as well as a few jars of sliced pickles, that's a nice extra touch that will go over very well. also fried egg plant is good depending on who likes it

Yeah...um no.

agreed...I would probably do half that to be on the safe side and then only if you have a crowd of heavy eaters.

You don't have to fry ALL of the fish, but I wouldn't show up with any less than 15 pounds of catfish filet, 20 would make me more comfortable, or 35-40 pounds of head on shrimp. That's just what I would do.

I said this: 15 lbs of fish is 12 ounces per man for 20 men. That's 2 6 ounce filets or 3 4oz filets. 35 pounds of Head-on shrimp will yield about 20 pounds of shrimp or 1 lb. per man. Assuming 16-20 count shrimp, that's 16 to 20 boiled/fried shrimp per man....Hardly eating contest territory.
