Anyone have a good Coon recipes?

Thought about asking food board but not sure how many check that board with knowledge on coons.

I'm thinking I'll just another in garlic, onions, Tony's, and Italian dressing in a aluminum pan and put it on a pit until tender. May cover with bbq sauce to make it less intimidating fit the guest

Roasting pan with onions, potatoes and sweet potatoes. Put some stock and red wine in the pan, cover with foil and roast at 300 until fork tender.

I could possibly think of 50-11 million better things to cook than a coon but you are thinking the right way if you are serious Clark.

I cooked one like that and although edible, it was borderline disgusting.

My grandfather in law can cook a coon and it is down right delicious. I was skeptical at 1st but damn, ill hurt myself eating it. He just cooks it and puts it on a bed of rice.

clean and cut into serving pieces...
par-boil in water for a while...
season and put on the pit...
barbecue sauce right before you pull it off...

cleaning it properly is everything...

I've et one, it was good but greasy. That being said, I might cook it some way to allow it to dry/drain a little? Idk.

I like it as the meat in a Brunswick stew, cuts down on the grease factor.

clean it well and soak in milk for a night

brown in bacon grease along with some sliced smoke sausage...

dump all of that in a pan with some peeled sweet potatoes and bake until everything is done...

coon is always greasy as hell, but this gives it enough flavor to be edible...

First thing you do is take all of the glands out of that thing if it's a boar coon, preferably outside

I have a bunch of acquaintances that are fans of coon. They'll get the rest from now on

Marinade then throw it on the pit like a goat. Drink a bunch of whiskey with your buddies and pick the meat off the bones when good and tender. Nothing wrong with a coon on the pit. Oh, and don't Beleive the soul brotha, or sista hype. Just because the blacks eat it doesn't mean it's good. I've eaten old blacks food that ppl raved over and it was meh. Maybe white folks back then didn't waste their time on wild life, corn breads, and everything else white ppl think they cook better. I'll tell you first hand that if you take your time and grew up in a Cajun home you can out cook most of them.

Proper cleaning is a must. If you don't know how to remove the glands, give it away.

This, and the reason many folks don't like coon who have tried it. If the glands are not removed, it wil permeate the meat and destroy the flavor. This can't be stressed enough. It is actually very good eating. Any of the above recipes will work....if the glands are removed.
