A couple years ago someone on this site did a you tube tutorial on how to clean and prepare coon.

Might try the internet.

My coon recipe:: clean, degland, leave one foot on, vacuum seal, freze, sale for 20 each the week before the Super Bowl

it's good white meat very similar to rabbit
I usually just remove the hind quarters but if you are ambitious there's two loins as well

fricasse or sauce piquant or brown gravy
Very clean and has a good flavor

This thread has me cracking up. I used to get 10-15 dollars a coon but Ole boy got laid off a couple months ago.

Take coon, boil it in crab boil for about an hour. That coon, throw it away and drink the crab boil.

No really, after boiling, rap in tin foil, put some onions in it. Throw it on the BBQ pit for about another hour and eat.

We were actually boiling crawfish and that would have been perfect to do. Instead I just cooked it an hour and a half on pit with fixings and seasonings in tin pan
