Bandit, we normally do not shoot scaup either. As an experiment last weekend, we fileted the breasts on a few of them. I washed them , seasoned well with Tony's and marinated them in milk, Tiger Sauce, and Italian dressing for 4 hours. We charcoal grilled them for 4 to 5 minutes per side. They were excellent, no wild taste at all. I will cook them like this again. Try it on some(or other ducks).
