I had to pay extra to have meat in my jambalaya at a restaurant in Utah over the summer. I'm just thankful for the great food that Louisiana has to offer.

Cajun style (Gonzales style) jambalaya, when properly executed is fricking delicious and doesn't need those nasty arse tomatoes to bail out someone who can't cook.

Screw that. There IS only 1 kind of jambalaya and it's not red. I'm tired of some Yankee from Shreveport telling me that creole rice with some chicken and sausage tossed in is jambalaya. It's not and it tasts like arse. No, yours isn't any better.

I'm from NOLA, not Gonzales. My husband from Baton Rouge agrees.

I never claimed to make red jambalaya (I don't think I've even tried it). I am just making an observation that people from Gonzales think the jambalaya world revolves around them. They have no claim (other than self claim) on jambalaya. The jambalaya festival started 40 years ago because a few guys decided todo a cook off.

I won't argue with that. I'm simply stating that there really is only 1 type of jambalaya and I wish people would stop trying to mislead me with the tomato stew crap.

So he makes jambalaya from scratch and you make it from a box and you are 1000x better cook than him?

You don't like Tony's ? Salt, garlic powder, black pepper, cayenne pepper?

Cooking a perfect jambalaya is not easy and takes some practice, and when done right and the rice is perfect and looks like hot dog buns and seasoned correctly, it is hard to beat, gonzales prides itself on jambalaya, don't like it then don't eat it and get the phuck out. Red jambalaya or whatever you call it is not a bad dish, but calling that jambalaya is like going to Rome and claiming chef boy r dee spaghettios is pasta and marinaria, you are going to ruffle some feathers

I like oak grove w/ sausage and chicken...sometimes shrimp.

I don't like dry jambalaya I prefer it moist.

For most in Gonzales, jambalaya is the root of our cooking. It's what we learned on, so of course we're proud of it. You and your oak grove premade shite can gtf compared to a properly prepared jambalaya

Also, most of the really good jambalaya cooks I know are fantastic all around cooks. They can cook anything... Really well.

Be careful lumping an entire group based off of some shithead in your office

I remember attending some of the original Jambalaya Festivals. Burnside would be closed down from about Marchands to past the football field. Music stages were set up in the street across from the Gonzales High School gym.

Dixie dukes and empty beer cans dominate. Cooks entering the jambalaya cooking contest were lined up along the sidewalk near the high school. All used giant cast iron pots and boat paddles to stir the mixture. You could buy a hell of a plate of jambalaya and a piece of bread for a buck or two.

Those catholics drank like a MFer.
