Holy shite, you're about to frick this up. Your probably is self esteem, hers not yours. See right now she thinks she has other options because she's a catch. You need to mentally beat that thinking out of her. Any chance you get to undermine her confidence should be jumped on. Ask her if she's considered such and such diet, or talk about her probability of dying alone. Once you've broken her down, she should settle for you. You just gotta play the long game, marathon not a sprint.
