There are so many.
The one that really sticks out to me - in terms of "blew me away" upon watching it - is Mad Max Fury Road.
Perhaps that's a controversial answer, but I was not ready at all for the 2 hours of nonstop intense action.
Argue the quality of movie as a whole if you want, but I'll defend it to infinity on its ability to go full throttle from start to finish.

For me it's Fellowship of the Ring
Just because I was a stupid college kid just trying to get laid so I asked a chick to a movie and that's what she picked
Had no idea about it and now it's a top 10 for me

Fight Club blew my mind when I was 20. I went back the next night to watch again

Deja Vu
Easily one of my favorite live action, non-comic book/major sci-fy/fantasy series (Star Trek, Star Wars, LOTR, etc) action movie of the 2000s. Just an all around great movie.

2001. It is still, I think, the only movie I have ever seen that I feel transcends the medium and becomes not "arty," but Art. I am blown away again every time I watch it.

Recently it was The Revenant in the theater. A few of the shots in that film left me in compelete awe...
LALA Land also left a mark simply because it was so unexpected. The emotion in the final 20 minutes of that movie are incredible.

The Matrix.
I didn't see it in the theater.
Watched it on old satellite on demand three times that day.
I thought it was the most original and ground breaking movie I had ever seen.
Can't think of anything that compares to that as far as a first time watch.

Planet of the Apes (1968)
I was 7. It was my first high-concept sci-fi with a major twist.
Primer
Inside Llewyn Davis
We love Cohen Bros movies, but this one took us by surprise. Perfect from start to finish.

Raiders of the Lost Ark.
I went in blind, not really having any idea what the movie was about.
Was not disappointed.

Pulp Fiction
For years, I felt there was a void in film making that I could fill. I envisioned a stylistic film of humor and violence with colorful dialogue from likable characters that were not stereotypical tough guys. I knew I could write something better than what Hollywood was producing at the time...until I saw Pulp Fiction. Then I felt inadequate, but pleased that someone was creative enough to accomplish what I had in mind with more style.
