Perhaps the new films are going to show that other Jedi-types survived the purge. The canon cartoon series leaves room for this. [Clone Wars had multiple "Sith-types" running around that haven't necessarily had their stories ended, and Rebels (and its associated comic book, Kanan) have a couple Jedi post-purge.]
It's quite possible this bad guy Ren was initially trained by someone like that way out in the Outer Rim or something, but it would make sense to have an association with Luke or someone like that.
Disney is definitely going at Star Wars on the multimedia front with novels, comics (putting their other big property, Marvel, to work), and tv series. Just wonder if they will overlap with the new films.

"Overlap" was probably the wrong word, since everything so far timeline-wise seems to be filling in gaps elsewhere in the series or shortly after "Jedi."
I more meant if they will refer to in detail or in passing to some of the characters shown in the other media. Specifically, were some of these other Jedi/Sith that were shown to survive the purge still active throughout the galaxy (obviously off screen in the original trilogy) to teach new apprentices?

Yeah, I'm thinking (my opinion is changing pretty constantly) that Snoke may have once been a powerful Inquisitor that snaked his way into leading the resistance to the New Republic.

I think Ren is more of an untrained prodigy who will come to Snoke's attention as the film progresses. I'm still of the opinion that the Force Awakening refers to the Force's power being amplified, and making more people Force Sensitive. I think Rey may already be Force Sensitive before the events of the film, but I don't think Finn or Ren were. Kylo I think is Leia and Han's kid, but came up short in the Force department initially due to his father's lack of it and became obsessed with gaining the power. So he studied the Force as much as he could, and eventually sought out Snoke. He joins the Knights of Ren, and takes up the name as a mantra in honor of his grandfather. He even builds his own lightsaber, which is incredibly flawed.
When he becomes Force Sensitive, he instantly has a leg up on anyone else who has been affected by the Force since he's studied it his entire life. He hunts down any others who became such, and becomes particularly obsessed with Finn when he discovers he has his grandfather's lightsaber. He may have a soft spot for Rey, but he will be relentless in hunting down Finn. As the trilogy goes forward, Ren will get more powerful and calculating along with Rey as they are trained by the respected masters. I think Ren will kill Luke in Episode VIII, leading to an incredible showdown between Ren and Rey in Episode IX.

You know, that I think about it, Yoda on his death bed told Luke to pass on what he's learned to the other Skywalker. So, I wonder if Leia will have been trained in the Ways of the Force?

Maybe in some ways, but not in the ways of a Jedi Knight. I think this will be another subtle "frick You" to the prequels, in that not everyone who is Force Conscious needs to be a bad arse warrior. I think Leia's way in the Force will be more politically savvy than anything else and make her highly formidable in any political situation. I'm thinking Luke is in hiding convinced that knowledge of the Force can in the long term only lead to darkness, even if he himself is powerful enough to fight it off. I think Leia is the only one who really knows where he is, and Han knows where to find Leia, although they've long broke up.

The more I think about it, it makes sense that the first order would develop an effective defense to light saber blows. It looks kinda bulky and impractical though.

Well storm troopers can't aim and flame throwers are more of a spray and pray weapon so that may work. The light saber bludgeon is ok I think. A good Jedi could still whoop em.
I wonder if the Falcon will be a breaking down junk pile again like on Star Wars and Empire.

It had better be. That was a big part of its endearing nature, and also lent a lot to who Han was. If they change it so that it is in tip top shape, then Han had better be a completely different person in reflection of that.
