Why is there no garlic in "smothered" soul food recipes

...like smothered chicken, etc.

Blacks don't have vampires so logically, they don't need garlic.

That explains why the Transylvanian recipes call for garlic.

Seriously though, I'm about to make a dish and was canvassing recipes and none called for garlic. Seems like it would be a no brainer for me.

I agree. I always use garlic in these type of dishes. I'm mostly white, though...

Almost anything smothered, vegetable or protein, needs garlic, IMHO.

My family has been Black for years and all of us use garlic in smothered dishes...I'm not sure where that Tom Foolery originated.

shite, whenever I smother chicken, pork or steak, I'm putting some garlic in it. That's a given. Hell, don't you put garlic in greens and blackeyed peas? I call BS on this no garlic in soul food foolishness.

In my home, the garlic is added right before the simmer and never during the sauté. There is garlic in the majority of the things I prepare.

When i moved to Atlanta, i learned real quick there was a HUGE difference in what we in Louisiana knew as "Soul Food" and what everyone else called soul food ...

... Soul Food in Louisiana uses garlic in things such as smothered meats and other areas where appropriate. Louisiana soul food makes soul food from other places look real regular.

You can go to a "soul food joint" out here in Atlanta and get a plate of food that looks no different than a plate you'd get at a cracker barrel anywhere in the country.
