Why don't poboy restaurants ever franchise to another city?

I don't enjoy NOLA homers always acting like their shite don't stink and everyone in the world is beneath them.

I was drinking in a bar uptown and was told by a local "you ain't CAJUN unless you from NAWLINS." I'm from Chauvin. He proceeded to argue with me that I wouldn't be shite without his city.

Another time at jazz fest, I watched some locals tell some tourists to move so they could have their spot. Their argument was "we live here so we should be able to sit wherever we want."

Places like shop rite, or krispy krunchy make pretty good samages. Some make their own bread and the krispy krunchy by da house makes em for 4.99 or 5.41 after tax total. Great sammage for the price. Sure it aint the best but for the price damn good

The product dose not come out the same when baked in different climates.

I would guess that unless you are doing a lot of business, it would be hard to make money with just being a po-boy shop. To do it right, you need someone running it that has a passion for it. It's a lot of labor from what I've been told. You can't just order crap from Sysco and take short cuts.

The whole "you can't bake NOLA bread anywhere else" is complete and utter hogwash. The reality is that crisp/thin crust, lofty to the point of empty insides, & the ability to go stale in milliseconds are qualities in a bread loaf that no one seems to want outside of NOLA...hence few if any commercial bakeries replicating it, as it is a very niche baked good.

Post-Katrina, Leidenheimer's production has increased & they're shipping all up and down the Gulf Coast. It's not exactly hard to get.

(Aside: I think Leidenheimer's has descended into terrible. If I wanna make a poboy at home, I search out a Binder's loaf, which still has some structure & chew to it. The Leidenheimer loaf is now mostly air, with dough conditioners, & it tastes sadly industrial.)

Best Bakery out of Houma makes an excellent product that freezes and reheats very well.
