Slice, then put it inside a tortilla with some sliced onions and bell peppers for a sausage fajita.

Lol...yep it's a good hangover meal to help purge the sins of the night before. Just don't plan a road trip after breakfast.

Sauté trinity, garlic, sliced mushroom in a lot of butter. Sprinkle flour a little at a time and mix well, cook for a few minutes to make a blond roux. Add milk and half/half to make a "cream sauce". Add sliced sausage and Tony's to taste. simmer for a few. Cook some egg noodles or fettuccini and mix with sauce. Grated Parmesan on top. Works great with deer sausage too. Good meal for the camp.

Nobody's asked you what kind of sausage yet, but since you asked about Jambalaya in the OP, then i'm going to assume this is smoked sausage we're talking about?
I'd probably use it in some red beans Monday. White beans maybe? Jambalaya is another good idea, as is the smoked sausage po-boy ... but only if you can get proper New Orleans po-boy bread. Don't put that sausage on no damn hoagie or sub bread and call it a po-boy. You can turn the AC down as low as it goes and make a gumbo too. Chicken and sausage spaghetti is good.
Personally, i'd slice it in half length-wise and put each one on a slice of Bunny bread with a quick stripe of yella mustid and make a foldover.

I cut them up, boil some pasta, open a can of spaghetti sauce and have them in place of meat balls.

I do something similar, but instead of sauce, I just do some butter noodles with it.

I suggest a pasta salad with some the sausage cut up in it as long as it doesn't have bar be que sauce on it.

Cut a link about the length of a piece of evangeline maid white bread and split the link lengthwise. Toast bread and dress with mayo and creole mustard. This time of year eat it with fresh cucumber slices on the side
