I'm reading an ad in Louisiana Cookin' for Lafayette Travel. The article focuses on crawfish. It says crawfish fat isn't actually fat. It's liver. I had no idea.

It is delicious whatever it is. And so is crab fat if it is even fat too. I like the crab roe too.

It's where most of the PCB's reside.

PCBs are very persistent in soil and water, with no known break down processes other than slow degradation by microbes. They adhere to soils or evaporate, and so will not usually leach to ground water. PCB-contaminated sediments in lakes or rivers can slowly release PCB back into water, from which it eventually evaporates.

Does a bag of tails have the "fat" removed? If you read the nutrition label, there is like 0 or 1 gram of fat in a bag of crawfish tails.

I want as much fat as I can get from crawfish. The stuff is gold. I just had no idea it was technically liver. Fascinating.

You knew this five years ago.

I googled crawfish fat, and one of the first hits is a link to a 2011 TD thread on this issue. A certain Gris Gris posted in it. LINK

Another hit was from LSU Ag Center:

quote:

The bright yellow to orange crawfish “fat” squeezed from the heads and sticking to the tail meat is not fat in the usual sense, she says. It actually is an organ in the head called the hepatopancreas that functions much like the liver in other animals.

“The pure fat content of this material is probably 30 percent. But as packaged for use in cooking, it may be closer to 10 percent,” Reames says. “On the other hand, cholesterol content of the pure head “fat” is high – more than 500 milligrams per 100 grams or 3.5 ounces.”

Cue Homer Simpson: Mmmmmmm. Hepatopancreas!

Your memory is better than mine! I was concentrating on or rather mourning the loss of being able to buy frozen crawfish fat. That was such a gift.

I thought I was told long ago it was actually the pancrease.

Now its the liver, I just know its full of flavor.

And now you tell me it's non-fatting and maybe even good for you!

I knew I loved these little creatures.

Well, one article in the thread linked earlier says pancreas. The one I read last night says liver. Either way, it's mighty fine stuff.
