What is Crawfish Fat?

I'm reading an ad in Louisiana Cookin' for Lafayette Travel. The article focuses on crawfish. It says crawfish fat isn't actually fat. It's liver. I had no idea.

It is delicious whatever it is. And so is crab fat if it is even fat too. I like the crab roe too.

Does a bag of tails have the "fat" removed? If you read the nutrition label, there is like 0 or 1 gram of fat in a bag of crawfish tails.

I want as much fat as I can get from crawfish. The stuff is gold. I just had no idea it was technically liver. Fascinating.

I googled crawfish fat, and one of the first hits is a link to a 2011 TD thread on this issue. A certain Gris Gris posted in it. LINK

Your memory is better than mine! I was concentrating on or rather mourning the loss of being able to buy frozen crawfish fat. That was such a gift.

I thought I was told long ago it was actually the pancrease.
Now its the liver, I just know its full of flavor.
And now you tell me it's non-fatting and maybe even good for you!

Well, one article in the thread linked earlier says pancreas. The one I read last night says liver. Either way, it's mighty fine stuff.
