I try to eat as many fresh raw vegetables as possible usually in the form of a big salad for lunch each day. My standard consists of romaine and red or green leaf lettuce, diced raw squash and zuchini, sliced mushrooms, mini yellow and red peppers, black olives, artichoke hearts , heart of palm, green or red onion and peppercini. Any other good vegetables I might add?
