What are your favorite big batch things for a week?

I'm getting tired of the expense and time it takes to cook every night or go out, and I'm not someone that gets tired of foods quickly. What are your favorite things to make on a Sunday to eat all week, and do you have recipes?

My wife and I are doing the same. Mostly been doing soups and slow cooker meals (roast and briskets). The soups hold up well through out the week and the briskets and roast we change up mid-week by repurposing lile turning pork roast into pulled pork sandwiches.

pot roast



all freeze pretty well and all you have to do is prep rice or pasta and reheat sauce

I like doing a pork tenderloin in my Crock pot. Nothing too fancy, just a well seasoned one. Good with rice and gravy, sandwiches, whatever.

Try to fix things that can be repurposed into different things through out the week.

Grill or roast some chicken. Eat that with sides one night. Other nights do chicken tacos, chicken pasta, chicken soup and chicken salad.

Similar things can be done with roast, meatloaf, pork loin, etc.

Baked ziti. Shepherd's Pie. Old school meatloaf. With the meatloaf you have options, its original form, sandwich, crumbled over some Fritos smothered in cheese, crumbled over some pene pasta and hit with your favorite sauce or dressing etc.

I buy lots of greens and fresh vegetables on Sunday to make salads each morning for work. I add chickpeas, boiled eggs that I make in advance etc. I can cut up stuff for a salad, throw in some chickpeas, grab boiled eggs, string cheese, almonds etc in less than five minutes and have healthy food to snack on all day.

A like to smoke a couple chickens on Sunday. Make chicken salad, gumbo, tacos, chicken noodle soup, etc during the week. This week the 2 chickens went into chicken salad and a dandy of a chicken and white bean chili.

Spaghetti, chili, other types of pastas/casseroles, etc.

I'll do roast or something, but I find myself not wanting to eat it even though I said I would, so now I stick to only making things I love.

Big pot of beans...make some black bean soup on day 1, then refried beans for burritos/tacos on day 2, then a chilled bean salad w/corn & roasted peppers for day 3. Day 4, you can make a chili w/remaining beans. You can do similar things w/white/cannellini beans, plus a big bunch of kale to make soup, mixed w/a little chopped tomato & garnished w/buttered bread crumbs & baked, etc.

A $5 roasted chicken can be stretched into a whole bunch of meals as well...

Don't overlook eggs: they keep for weeks, you can make quiche using a prefab pie crust, eggs, and whatever leftovers lurk in the fridge. Or make baked eggs to serve w/green salad & baguette.

A cheese plate (1 hard, 1 soft, 1 blue) plus fruit & some dry cured meats is another favorite weeknight no-effort dinner of mine.

Million Dollar Spaghetti (Pinterest wife makes a low-fat version w/ turkey meat)

Red beans & turkey sauseege
Greek Chicken cous cous
Gumbo casserole. I think pinterest
Ham & greeen casserole. Southern Living?
Buffalo chicken wraps
Black bean & Sweet potato soup
Crockpot tacos
Greek orzo & rotisserie chicken
Chicken & dumplings
Orange & Ginger shrimp cous cous
Salsa verde enchiladas. Google it.
BBQ pork tenderloin sandwiches & beans (crockpot)
Obviously chilis. Traditional or white bean chicken chili.
Eggplant lasagna
Pork & polenta. Crockpot pork tenerloin mixed with rotel, black beans, and over baked polenta cakes.

I like to smoke chicken and/or a pork butt on Sunday. You can use those proteins to make countless quick dishes.

I do all of the above from time to time but we cook during the week too. We will eat light though. Lot of eggs, fish, salads etc...quick stuff.

I did make a big pot of Lima beans Sunday and we had a piece of snapper roasted about 10 minutes with limas last night. We will eat them three or more times then freeze or give to the neighbors.

A good bit of what I listed above is crockpot friendly and a two night dinner. For our schedules and our budget things like this work out best for us.

Slow cooker full of any of these:
-Chuck roast, Campbell's French onion, Campbell's beef consume, and one can of golden mushroom. French dips with provolone and rice and gravy.
-Boston butt with tomato sauce, steamed tomatoes, rotel, cumin, chili powder, white vinegar. On tortillas.
-Boston butt with 1/2 can Dr. Pepper. Rub generously with any BBQ rub. Skim fat (of which there will be lots), shred and add BBQ sauce to taste. Serve on a bun.
-bag of frozen hash potato chunks, chicken stock and bacon. Stir in cream cheese before serving and garnish with more bacon, cheese, and scallions.

My taco soup is 1 lb beef, 1 lb pork, 2 cans each pinto, kidney, black beans, mexicorn, diced tomatoes, rotel. 2 packs ranch and taco seasoning. Serve with Fritos, shredded cheese, and sour cream. Brown the meat, add taco seasoning, then pour all ingredients into the clow cooker.
