For a couple of weeks now I've been wanting liver and onions. The other day I finally picked some up and cooked them this evening.

I started off by caramelizing some thin sliced yellow onions first.



Next was the liver.....



Served with hash browns and green beans. Not bad at all!!!!! Bad picture. The onions were perfect but look pretty dark in this picture.

Sautéed lemon chicken w/capers over linguini. Kind of a bastard piccata....went outside and picked a gigantic lemon, zested & juiced it. Heated the zest w/olive oil & butter added chunks of boneless, skinless breast, plenty of black pepper. When chicken was mostly cooked, added 1T capers & about 1/3 cup of lemon juice, cranked up the heat & let the juices cook down a bit.. Turned out pretty good w/o the trouble of flattening, breading, and cooking the chicken separately. Was too tired to do all that after bottling limoncello all afternoon.

5lb boiled crawfish from Fisherman's Cove in Kenner and a burger from the grill.
King cake for dessert.

Filet and cauli rice. I've never had success with cauliflower rice until I was able to find frozen crumbles.
