I'd nix the beer I used (Guinness). Gave it a sweet taste that I wasn't a fan of.
Last deer chili I made I used Irish Channel Stout

Taco messican casserole pie I whipped up.
Used ground turkey meat instated of beef.
I'm becoming a fan of this stuff when your making something gang has overwhelming ingredients.

West Indies salad
Had to Google that.
Very simple, but very good, especially in a nice ripe avocado half on lettuce with some summer tomato slices, hard boiled egg slices, maybe some hearts of palm.

Smoked/indirect grilled lobster tail
Split down the back and meat loosened from tail. Skewered to keep from curling up.
On the BGE at 225 degrees over apple wood.....looking to get to internal temp of 140 degrees. About 30 minutes in spoon my version of Commanders garlic butter with parmagianno reggiano/fressh rosemary alll in the shell
Removed from shell with more garlic butter over steamed asparagus.....was amazingly moist and tender.....not a morsel was left
I love spiny lobster!!!
