The wife took some chicken breasts out of the freezer and didn't have a specific plan for them. I decided we were having grilled chicken tacos tonight. Of course we can't have just taco so I decided to make a Mexican rice to have along with the tacos. The recipe I'm using called for fresh chili peppers and I wanted to use some in the lime marinade I threw together. I went outside and picked a few off the little jalapeno pepper plant I have out in the yard and they looked pretty harmless. Instead of the using nitrile gloves as I usually would I went bare handed with cutting de-seeding and dicing them. I must say my fricking hands are burning like crazy!!!

Anyway, got some homemade Mexican rice, refried beans and refried black beans, homemade guaccamole, and will be grilling lime marinaded chicken breasts in a little while for dinner.

Must add a shot of Hornitos or two really is a nice addition when prepping for dinner.

Ain't nothing like that jalapeño burn. I suggest "washing" your hands real good with some olive oil... let it pull the heat from your hands. I usually do it over a trash can and save myself a mess and an oily sink.

I'm having dinner at Mestizo tonight. No clue what I'm ordering yet. Headed back to the west coast tomorrow

Roasted chicken

Asparagus lightly grilled

Brussel Sprouts caramelized with shallots, andouille(Jacobs)and balsamic vinegar

My whole grain mix: Onions, garlic, fresh ginger, chicken base, red pepper flakes, cayenne, black and white pepper, kosher salt, water, split peas, green lentils, hard red wheat, hulled barley, red quinoa, brown rice.

Yeah, after doing the peppers I juiced some limes so that like makes it burn more four times more. I'll live but holding an ice cold beer to ease the pain I may run out of beer. Lol....... Not really just holding it.

The Brick Oven in Austin right down from the Frank Erwin Center. Wife is a Longhorn and we brought our girls down to see a basketball game this evening.

Austin doesn't get enough credit for great restaurants and culture... but you have to get past the liberals.
