Sam's Cod fillets cooked in toaster oven, English peas, potato salad, chilled bottle of water. Had six pieces of Easter candy for dessert.



Rationing it out to make it last ALAP.

I've been wanting to incorporate quinoa into my diet. This was my first recipe.

I cooked 1/2 cup quinoa in no salt veggie stock. Then I sauteed onions, garlic, jalapeno.

I took 1.5 cans of drained black beans and mashed them into a paste.

Then I added and mixed together the onion mix, cumin, sriracha, 1 egg, quinoa, 1/2 cup of corn, remaining .5 can of black bean, and 2 tbls of tomato paste.

Formed into 8 patties, and cooked 2 on the stove top and the others in the oven. I wanted to try both methods. I actually preferred the stove top, as it created more of a crust.

Next time I'm going to make a sriracha blended greek yogurt to dress the burger.

I'll def. be a regular part of my repertoire.
