WFDT - Game 4 Edition

My box smoker couldn't be happier.
Top shelf (hockey term...see what I did there?) fresh Creole tomatoes quartered with Old Bay seasoning.
Next shelf is corn on the cob which I soaked, peeled the husks back and removed the silk, then rubbed with ghee and sprinkled with Tony's. The husks were folded back up and tied with butchers twine.
Bottom shelves are chicken quarters. I tried to get a pic but the camera lens fogged up.
Can't wait for the drop of the puck.

Cut up a beef roast and cooking it down with cumin, chili powder, beef broth, and chipotle peppers.

Yesterday's smoked pork loin stuffed with Gouda, sausage, skillet potatoes, and steamed broccoli. Looks disgusting, but tastes damn good.

Keg Roasted Whole Chicken
I had a nice whole chicken on the smallish side that I put to marinate in some White Balsamic Vinaigrette for a couple of hours today. I got the Keg lit and holding at an degrees with a aluminum pan as a diffuser and drippings catcher beneath the cast iron grate. When it was about time to put the bird on the grill I added some black pepper, sea salt and red pepper flakes and on it went.
Served with spicy crab boiled potato salad and corn on the cob.Pretty darn tasty meal!

My brother brought back two steamed lobsters from his Florida trip so those were peeled and reheated in some butter with a butter garlic pasta.
