Consider using these seasonings as salt replacements, adding additional spices as needed. That's how I use Tony's...as a salt substitute. Thus, I never over salt a dish (for me). I'll add additional seasonings for the flavors I want. Works well.

SYM has less salt than the other two. I need to read through Prudhommes first book and start making my own at home.

my seasoning has NO msg , low sodium (135 mg) , and is infused with smoked chipotle (no cayenne)

I disagree. Emeril sells one and he uses it. I think he knows how to cook. Paul Prudhomme has a line of pre-mixed seasonings and he know how to cook. In fact, I found an unopened container of his shrimp seasoning last night when I was looking for his salmon seasoning that I like. I put it in some melted butter with green onions and simmered it a bit. I brushed the butter on the salmon, added a little more of the seasoning and loaded the top of it with the green onion mixture. I slow roasted the salmon and had that with grilled romaine hearts. The seasoning worked out very well and I cooked it all by myself.

FWIW, 8 different ppl in Texas have won chili cook-offs using my chili seasoning. My cooking secret, add 2 cups of ZingZang Bloody Mary mix when cooking the chili
