Factory
The sausage was already sliced and they provided blade meat pork that was already cubed

So, you can't track down the winner and taste theirs?

No can't track down a Taste. After you cook it you give a sample to the judges and the rest to the festival to sell to the public , so by the time the announce the winners it is all mixed up and probably sold.

It was set up really well and well ran, we had fun and will be back next year, they had 90 teams competing, and all benefited cystic fibrosis, so a great cause

Just left the festival. Food was amazing and beer was ICE cold.

But .... My only opinion. I brought my kids. Even tho they had a good time. I feel like they're missing a huge opportunity on raising additional money by not having kids attractions.

Simple things. Face painting ... A few jumpers ... Etc. They could make a killing and donate even more to a great cause.

We'll be back next year regardless.

I Agree, I thought there would be more kid activities, sorry if I mislead you, I assumed they would have a few things like you listed

Woody won the Jambalya cook off

I may have missed it but were you able to walk around and taste each cooks jambalaya. Or just stuck to the $5 plate?

Nah ... You didn't. We committed to it. Kids cut the rug for a bit. I think I may have mislead them .... My 8 year old son made the comment, "dad there sure are a lot of old people here!"

Thanks paw. Some really really good cooks out today. There were 66 cooks in the first rounds Saturday morning. Of those 66 only 4 were thrown out. There were 27 finalists. Not one of those finals pots was tossed. I cooked the best pot I've ever cooked but woody won again. I'm sick of that bastard winning

Woody is dialed in. Happy for him and he is a good guy, a lot of good jambalaya did not make it

I would of hated to of been a judge , they had a tough job this weekend.

Pretty excited about boucherie. Lamar Dixon is a good venue for cookoffs. Love being able to back the truck up to my spot and have plenty of space. Looks like you were under the other pavilion paw. I see the front of my truck in your pic wish I had seen the thread earlier I would have said hi.

Would of liked to meet you, very happy the Boucherie will be at Lamar Dixon, very nice to be able to back your truck up and cook, plenty of parking, electricity, running water, fantastic pavilion, hell I might even rent a travel trailer and spend the night out there.

You are right, the black specs are my Achilles heel, I just can not get rid of them

Are you adding hot sauce when browning meat or onions? Hot sauce will burn on the side of the pot and make black specs. The rice looks perfect. Good job. How did it taste?

I do, I will try without next time, thanks for the tip

I thought my Jambalaya looked really good (although it was dark compared to the winners)and I was pleased with the rice being popped, the taste was good but i Knew when I tasted it it was not a winner, but not sure I can explain why I thought that.

No worries, Can not wait for the Boucherie
