Steaming Crawfish. Ever seen this video?

Warning: This video is 15 minutes long. But it has methods I've never seen before. Makes me curious about these Rocket Pots. What do the experts here think? Looks like a lot of work for the same result.

I've been to some asian restaurants that steamed crawfish. I've never tried them though.

I'm sure steaming them is fine and all but why do people have to make simple shite so complicated? The point of the backyard boil is to throw everything in one pot, boil and dump on a table.

Now, the recipe this guy uses is absurd. 4 bottles of concentrate, 3 bottles of cayenne, a jar of pickled jalapeños, 12 cups of some boil mix with more cayenne in it and just to make sure your taste buds get burned out of your mouth, he heads some supposedly super hot hot sauce. So silly.

I've been to someone's house where they steamed them and they were pretty good, but I've got too much respect for crawfish to steam them to death.

I've never eaten steamed crawfish but I have eaten steamed crabs and they were pretty good. My buddy from LaRose moved to the Georgia coast for a while and picked up the method there. His aren't as seasoned as the typical South la boiled crabs and they take a good while longer to cook.

... then he says he's not gonna make it too hot, because kids will be eating them.

Think of the physics involved. Cooking time is important to avoid overcooking the crawfish. You have limited time for the crawfish to absorb seasoning which is accomplished by diffusion. Steam has lower concentrations of seasonings than a liquid solution, so diffusion occurs at a slower rate than boiling. In order to get sufficient diffusion with steam in limited time you need higher concentrations of seasoning in your water boiled to create the steam than you would need if you cooked the crawfish in the boiling solution.

Didn't watch the video, but have been to a north Louisiana crawfish "boil" where they basically steamed the crawfish in straight water then dumped the crawfish into ice chests, sprinkled Tony's on top and then let them sit for a few minutes to soak up the flavor.

Absolutely terrible experience

AMEN! 2 boiling rigs and endless techniques and times People have been boiling crawfish just fine for generations......

You didn't watch the video, Poodlebrain.

He steamed them with UNSEASONED water ...

... then soaked them in a different pot that had an insane amount of seasoning that included granulated boil, liquid boil, cayenne pepper, onion puree, celery puree, two bottles of bay leaf, a jar of pickled jalapeños, and some hot sauce ... in 7 inches of water.

So even though he "steamed" them ... the seasoning method was still to soak them. His entire reasoning for steaming them was to clean them. He said he doesn't like the "gunk" that's normally in the heads either.

You really could've watched the video before giving an irrelevant physics lesson on a method that wasn't used.

I'll stick with my tried and true rinse and boil method. Just the fact that you need two boiling rigs for this is ridiculous.

Don't forget the 3rd set up he said you would need since you have to do the veggies, potatoes, sausage, etc, separately. I like how he threw in the little "I would know...... 2 years running now" or some shite. And who the frick is Keith Jenkins?

I am a huge advocate of steam cooking the crawfish and soaking the crawfish in a different pot with seasoning, similar to what unclebuck504 is describing. Takes me only about 12-15 minutes to steam 50lbs of crawfish and an additional 15-20 minutes to soak them.
