Shrimp stew...ever put something else with the shrimp?

Looking to make a batch of shrimp stew but I may end up lite on the shrimp (have some other dishes to make as well). Have yall ever added something else with it...tasso, andouille, regular sausage, potatoes? Im not looking to add crab meat. Will be a roux base with shrimp stock...

I am not a okra fan...wife is but im cooking was thinking potatoes egg with either tasso or andouille at this point.
IF one were to add okra at what point would you add it? I never cooked with it before. Let it simmer with potatoes for 30-40min or is that too long?

Only thing I've ever added is crabmeat and eggs. Agree with Ched though...potatoes are a good option.

I think for sure potatoes and egg are going in. Still leaning to a sausage of some sort becasue I think ill be lite on the shrimp and want some more protein other than crab meat. Maybe okra for the lady's sake. This corn idea has peaked my interest as well. I dont want too much going on tho...

Shrimp n potato stew is a bayou Lafourche classic. You see it as a Friday lunch special at plate-lunch-type cafes/restaurants all over Houma/Thib/Morgan City. I like to use waxy red potatoes, as they hold their shape better than the floury or yellow/Yukon gold varieties.

That was my worry for potatoes...even slightly overdone and they will mush up and ruin it all. I may sub corn for potato this go around.

Yep I sure will, ill see what I have after stopping at the store and post up on here. Trigger warning...I plan to use jar roux because I can and feel like being lazy

Don't boil the eggs first. Get it good and hot and while it is on a good hot simmer just after boiling, crack a dozen eggs in it. They will keep form and deliver a magnificent flavor. Only way I like shrimp stew.

Saute the okra for 3-4 minutes then add it with 20 minutes left. Sauteing keeps the bike a from getting slimy. Made an okra, tomatoe, sweetcorn, hatch chile stew tonight that turned out great. Thought about putting shrimp in it but opted to poach some bkack drum in the stew.
