Even then stir gently. The eggs should be the last thing added after everything else is cooked.

I thought about doing the eggs like that...thats how I do with crawfish boil. I pre boiled them for this batch tho.

It was meh...needs some work. I didnt use my bigger pot and I ran out of room. I used a whole jar of lite kerys roux, 64oz of some shrimp stock I made and 32oz of water. I added a little more water/stock but it was still too thick. I went with baby potatoes whole, sweet corn, tasso, boiled egg, and shrimp. The shrimp and tasso were great. The wife and I were meh on the potatoes. I liked the corn the wife was unsure. Eggs were good...but just eggs coated in sauce lol. I needed a bigger pot to add more liquid in the beginning and let it cook down...it was so thick the roux had a hard time dissolving. It needed more cook time. Next time ill stick to shrimp tasso and dropping egg in at the end.

For above this is what I did....but id alter it next time except for the stock.

The stock I just oven roasted and boiled about 16lbs of heads. I got 45lbs de headed and froze the shrimp...used the heads for stock. Didn't add any seasoning...just boiled...reduced some...and ran through cheese cloth several times. Makes it taste and smell like shrimp stew before even adding shrimp.

Used a large container of guidrys and browned in a little oil. Added 1 pack of Richards tasso diced up and browned. De-glazed with a little stock then added the rest 8 cups of stock 4 of water. 1 jar of kerys lite roux. It needed more liquid to start it was a pita to get the kerys to dissolve all the way. Once it was decent I added about 1lb of baby potatoes and cooked for about 15-20min. Added 2 cups of frozen corn and simmer for a few min. Added some boiled eggs and simmered for a few min. Added about 2 lbs peeled shrimp (not nearly enough) and simmered for a cpl min till done. Only added some NuNus seasoning as I went till it got to where I wanted.
