Shish kabob ideas?

Cooking Shish Kabobs for a large Pool party this weekend. Looking for any unique ideas to make them a little more exciting than just meat, peppers and onions.

Pineapple is great on kabobs. I’ve had good success with mushrooms also

YES on the pineapple and mushrooms. Tomatoes, zuke, yellow squash are also nice. Par-cooked new potatoes and/or sweet potato chunks are fab. Even pre-roasted carrot chunks are nice. Hit them with chimichurri while cooking and serve w/ the extra sauce. Even baby bok choi and/or cabbage wedges are nice on the grill.

Sirloin steaks, boneless country pork ribs, chicken breast for meats, Easy to cube. Or shrimp/bacon wrapped with lemon pepper

Any of button Mushrooms, cherry/grape tomatoes, zucchini, squash, cut corn on the cob into smaller portions, pineapple. I particularly don’t want to eat a grilled onion or bell pepper on kabob so I don’t use them

That’s what I usually do. I was also gifted those flexible ones that have a syringe practically to thread them, so much easier than straight metal or wooden

I put cherry tomatoes, yellow squash, and zucchini on mine and they turn out very good. I would imagine most veggies that do well with roasting would be great on a shish kebob.

Just as important to me as what’s on it is where you place it on the skewer. I try to make sure flavorful things like pineapple and onion are next to the meat so the meat will absorb some of the flavor.

You can do some corn on the cob, shrimp, or a firm fish, like swordfish chunks, tuna, or halibut. Asparagus (thick), peaches, or steak.

I like to do veggies and meat on separate kabobs because the meat may take longer to cook.

Soak in milk in a skinny cylinder/cup/container, batter in chicken fry, and fry them. Beats the hell out of grilled.

Agree with previous posts on pineapple chunks.. but also if you have a char-boil greaseless fryer put them things in there and chill out in the pool while they are cooking. They come out better than the grill

Yep, I throw on some thick slices of zucchini and yellow squash.

As for tomatoes, I put them on a skewer by themselves since they tend to burst open when cooking as long as needed for the meat and larger vegetable chunks to cook. I'll let my kebabs cook to about 1/2 way done then put on the tomatoes.

Also, olive oil and season some whole pods of okra and grill them separately to go with the kebabs. Grilled okra is the bomb and one of my favorites.

Second on the boneless country pork ribs. It is an often underappreciated cut of meat that never fails to deliver flavor.
