The hiking trail around the Ogle Cabin outside of Gaitlinburg was a really fun moderate level hike. It has a few rocky spots but the elevation isn't bad and there's a cool little cabin and a mill about halfway through the hike. I would also stop in Chatanooga on the drive up and do Lookout Mount...
