Made my normal etoufee but added leftover crawfish boil tails in there and now it's too salty. What's the best way to mellow it out?

Add water and then thicken it up again.

Throw some potatoes in there and let them simmer for a good bit. Problem is your crawfish will be over cooked by the time the potatoes soak up the salt.

Might want to get them out if possible and let the potatoes cook in the gravy itself.

I would make another base (salt less) in a separate pot. Add 1 cup at a time to existing etoufee until desired taste achieved

I thought about this and using unsalted butter, which I know still has some salt.

this.

but just keep the taters in there long enough to where they don't start "melting" in the pot causing a potato gravy to ensue

Is it super super salty? If it is just a little salty, cook your rice with no salt and just eat a lot of rice with the gravy. If it is too oversalted, i like the idea of making a saltless base and incorporating it into the salty batch.

This. Nothing will really effectively remove salt, but you can just add more stuff to the pot to get the salt level right. Might as well just make more etouffee.

I would scoop out all the solids (veggies and tails) and throw peeled potatoes in the broth and boil for awhile. That keeps the ingredients from overcooking

Sorry folks. Potatoes will NOT reduce the salt in a liquid. It is an old kitchen MYTH. They will reduce the amount of liquid a little, but the remaining liquid will be just as salty. A sponge would have the same effect. Google kitchen myths.

Serve it over rice that has not been seasoned?
