Ribeye Cap (Spinalis) at Costco

Costco on S. Carrollton has Prime ribeye cap right now. If you've had it, you know how insanely delicious it is. If you haven't had it, get there and get you some. I used to buy it Rare Cuts for close to $30 a lb. but they didn't have it the last several times I went. It's $18.99 at Costco, and worth every penny!! I bought 2 lbs and had friends over for dinner. Went back the next day and bought 2 more pounds.

Damn. I wish our Costco would hurry up. That is one great tasting piece of meat.

It's the tender part of a ribeye. The lip. But its a long cut of just that.

I'm going to have to find someone with a Costco membership.

Saw this yesterday at Costco but don't know much about this cut. I'll have to go back and pick some up. What's the best cooking method? I've used the reverse sear or sear plus broil method on regular ribeyes.

I brought to room temperature. Rubbed lightly with olive oil. Seasoned with sea salt and cracked black pepper. Put my cast iron on high heat for about 10-12 minutes. Cooked for exactly two minutes on each site. Rest for 5 minutes. They were PERFECT!!!

Damn. That "Classified" cut at Doris Metropolitan is $46. Same size (9 oz.) from Costco will set you back $10.71.
