Red Beans question

Soaking Camelia beans to cook later tonight.
Does the FDB use the water the beans have soaked in or start with fresh water/chicken broth?
I've always used the soaking water to cook my beans to no ill effect.

I rinse and use new water/stock/broth. I doubt the results are picky.

it really makes no difference... but stock seems to work best

Yes, you should rinse the beans thoroughly. It's healthier and makes the dish less gas-producing.
For me, it's a no-brainer since I soak my beans in a brine to soften the skins.

Always rinse the beans twice here. I cook them in smoked ham hock stock. Rinsing the beans does cut down on the gas.

I just put a large bag of Camellia Navy Pea Beans to soak for tomorrows rain and game. I'll dump, rinse and cook in stock.

When the beans are about done, after you have mashed a few on the side of the pot add a bunch of butter and stir in to make them extra creamy and shine like a new penny.

Soak? Why bother? I'm cooking all day anyway when I make red beans. Rinse, look for stones, then straight into the pot of broth.

People often argue whether or not rinsing after the soak cuts down on flatulence. I experience it with either method.
What a rinse DOES do is give you are cleaner beans. You know that dark foam you often get on the top when cooking beans? I bet you don't get it or have to worry about skimming if you rinse them good after the soak. I don't, whether I go stove top or crock pot.

Soaking has no effect on gas per what I've read in CI and McGee.
CI Says that adding salt to the soak does make the beans better flavor and texture. That is against some old school advice, but I trust the CI science and testing on this issue.
