Potato Salad question

Hosting a Mardi Gras party next Saturday and we are having a ton of food, gumbo being one of them.

We will have seafood and chicken and andouille.

I'm not a fan of potato salad, however I've heard it goes well with gumbo or actually in gumbo.

My question is- when I go to the store and buy potato salad, I see mustard, mayo, egg, no egg, etc

Which one is considered the "go to" for gumbo? Or is it just a personal preference? I guess the next question is- if it's a personal preference, which is most popular?

I'm not a fan of mustard pototao salad in genera and especially not in Gumbo. Mayo based is the way to go. As for eggs, that would be a personal choice. I don't put eggs in my Gumbo Potato Salad.

When I make potato salad, I always put eggs in. I also add both mayo and mustard, but tmuch smaller amount of mustard than mayo. Any potato salad I make would be a candidate for eating with or in my gumbo.

When I buy potato salad, I buy mayo, not mustard. I guess I didn't pay attention to whether or not it had eggs in it.

substitute potato salad with baked sweet potatoes. goes so much better with gumbo. it doesn't "melt" in the juice

I actually cook them in the gumbo
sweetens up the gravy a bit too

I like doing a mayo based with egg but not mustard or pickles. You can't really go wrong though, think it's generally one of those things that's based off what you grew up with

I have never found a store bought that was any good, and I like way more mayo than mustard and lots of eggs. That being said, potato salad is one of those things I just can not make myself

Me either. But I will put a boiled egg in my gumbo. I don't cut it up and mix it. I just cut a bite at a time with some gumbo.

A confession. I have never purchased commercially prepared potato salad. Getting it right is that important at our house.

I don't seem capable of making small amounts of anything. My husband was the one to buy a small container of potato salad when he wanted just a bit to go with some leftover gumbo. No wasted food. Fine with me!

So now, I make potato salad if there will be company or if we know it will be shared. Otherwise, Albertson's makes one that will do.

My mother makes my favorite potato salad, and we always make it to go with gumbo.

Potato salad is like gumbo, in that everyone has their own traditions and preferences.

Hers uses 2 potatoes, chunked and boiled with an egg. Peel the egg and smash up with dill relish, garlic powder, celery salt (key ingredient), salt, cracked black pepper, about 4 Tbsp mayo and about 1 Tbsp mustard. Add potatoes and mix/mash to your preferred consistency. We tinker with more mustard to taste. Mix in chopped olives. Sprinkle with paprika.

Moms recipe is fifty years old and has eggs ,black olives, salt black pepper, red onion, celery ,parsley, plus a table spoon or two of garlicky extra virgin olive oil and vinager put on when the potatoes are hot then some miracle whip folded in. Fabulous but not sure of it in Gumbo, just never tried it in it.
